In the early 2000s, our brewmaster’s wife was diagnosed with celiac disease. That’s a tough diagnosis when you work in the beer industry and love drinking traditional craft beer. Joe made it his personal mission to brew a great tasting craft beer made from traditional ingredients and crafted to remove gluten. He didn’t care about following any trends, he just wanted to make a craft beer for people who need or want to avoid gluten. That’s how Omission Brewing Company was born.
Omission’s gluten free beer
Omission beers are brewed just like other great craft beers, with malted barley, hops, water, and yeast but are crafted to remove gluten. Once the beers are transferred to the fermentation tanks, we add a brewing enzyme called Brewers Clarex™ which breaks apart the gluten protein chains. The beers are then packaged in a closed environment to eliminate any cross contamination risk. A growing body of peer reviewed scientific literature supports that our process is effective in the reduction of gluten peptides. Each batch of Omission is tested both internally and by an independent lab using the R5 Competitive ELISA for gluten content. To date, every batch of Omission has measured at levels less than 20ppm. Although there is scientific evidence supporting this testing, the evidence is not conclusive.
